Freeze-drying is a way to preserve fresh produce by removing the water while retaining the form, color, and fragrance. At Farm & Forest Organics, our produce is flash frozen on the day that it is picked. Then a special technique is used to take out the water without destroying the product. This process is done in a vacuum and is called sublimation. Under low pressure at low heat, the ice is vaporized-converted directly into gas-bypassing the liquid stage and thereby avoiding product breakdown.
